Some weeks ago, I was in Minna, Niger State, for SPELL Africa International's Spelling Leaders Competition. Whenever I visit a state/region, I endeavour to know a thing or two about the culture there. Food is an important aspect of culture. So, when visiting a state/region, I try as much as possible to have a taste of at least one of its local delicacies. At the popular Minna market, I tasted MAZARKWAILA for the first time.  Mazarkwaila is a sugarcane extract popular in Northern Nigeria, particularly among the Hausa people. It's a traditional snack made by extracting juice from sugarcane and then boiling it until it thickens.  Mazarkwaila is often enjoyed as a refreshing snack or used as a sweetener (also a substitute for white sugar) in various dishes.
